Every country has its own taste of foods and bakeries, but Australia has something unique in its own kind. They formed a cake people named it “Lamingtons” homemade cake which is founded and famous as National cake of Australia. Quite Interesting, isn’t it?

There are many varied accounts regarding the creation of the lamington, however most agree that it was named after Lord Lamington, who served as Governor of Queensland from 1896 to 1901. Other claims suggest it may have been named for his wife, or even the village of Lamington, South Lanarkshire in Scotland, from which the Lord Lamington’s title originates.The earliest known reference to the naming of the lamington from June 1927, links the cake to Lord Lamington. The origin of this cake was Brisbane in Australia.

People of Australia from long time using it for every birthday party even from childhood. At birthday parties, they especially organize it at home and dedicate to birthday party. On Australia day, this cake is special thing whipping up to celebrate it.

However, every home, franchise has its own taste of making Lamingtons cake. There is official recipe of lamingtons cake and traditionally it’s been made of a sponge cake, but one of the picked recipe I will going to share is cake  is with little sturdier, coated in a layer of chocolate icing. It sometimes comes in two halves with a layer of cream or jam in the middle. Found commonly throughout cafes as a perfect accompaniment to tea and coffee

For the cake
4 eggs

200g (1 cup) granulated sugar
1 teaspoon vanilla extract
200g (1 ⅓ cups) all-purpose (plain) flour
1 ½ teaspoons baking powder
110g butter, melted and cooled

For the icing
75g unsalted butter

250ml (1 cup) milk
65g (1/2 cup) cocoa powder
435g (3 cups) icing sugar
