Other claims suggest it may have been named for his wife, or even the village of Lamington, South Lanarkshire in Scotland, from which the Lord Lamington’s title originates.The earliest known reference to the naming of the lamington from June 1927, links the cake to Lord Lamington. The origin of this cake was Brisbane in Australia.

1 teaspoon vanilla extract
200g (1 ⅓ cups) all-purpose (plain) flour
1 ½ teaspoons baking powder
110g butter, melted and cooled

75g unsalted butter
250ml (1 cup) milk
65g (1/2 cup) cocoa powder
435g (3 cups) icing sugar
